Secret of the month
GINGER FLAPJACKS
Ingredients: (Makes 16)
4 oz (110g) margarine
2 level tbsp golden syrup
8 oz (225g) rolled oats
1 level tsp ground ginger
4 oz (110g) soft brown sugar
Topping
6 level tbsp icing sugar, sifted
3 oz (75g) butter
1 level tsp ground ginger
3 level tsp golden syrup
Process:
Preheat the oven to 350 deg F/180 deg C/Gas Mk 4. Grease an 8 inch (20cm) square tin. Melt the margarine and syrup in a pan, mix in the rolled oats, ginger and sugar and pack the mixture into the tin. Bake for 20-25 minutes. To make the topping, gently melt all the ingredients over a low heat. Pour on top of the flapjacks and leave to set. Cut into squares when cold.

OAT COOKIES
Ingredients:
110 gm Butter
½ tsp Soda bicarbonate
110 gm Demerara sugar
110 gm Rolled oats
50 gm Golden syrup
25 gm Walnuts (finely chopped)
110 gm Flour (sifted)
Method: Put butter, sugar and syrup in a saucepan and stir on low heat till all the ingredients blend. Let this mixture cool. Sift the flour with the soda bicarbonate and stir in the rolled oats and walnuts. Pour the melted butter mixture and make soft dough. Form about 30 small balls and place on greased baking trays, keeping space for them to spread. Bake for 15 minutes or until brown. Serve hot.
